Chicken Sandwich

This one right here takes me back to my school days. When chicken patties were served for lunch, I knew it was going to be a good day! I remember in school always being excited when the lunch menu online read that chicken patties would be served that day. I decided to honor those chicken patty sandwiches by making a healthier and more ‘adult” Chicken Sandwich. The best part about this chicken sandwich is that it’s so simple to make!

Ingredients

  • 1 large chicken breast

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • lettuce, mayonnaise, and brioche burger bun

Directions

  • With a meat mallet or rolling pin, flatten out chicken.
  • Season with garlic powder, oregano, salt and pepper.
  • Sear chicken in a non-stick skillet in olive oil over medium-high heat for 6 minutes per side. Or, until internal temperature reached 165°F.
  • Remove from skillet and place on brioche bun.
  • Top with lettuce and spread Mayo on the bun.
  • Serve and Enjoy! 

The chicken on this sandwich is simply a well seasoned and seared chicken breast. It is important to flatten out the chicken breast with either a meat mallet or a rolling pin. A flattened piece of chicken cooks a lot more evenly than an unflattened piece of chicken. The chicken breast is then seared over medium-high heat until it is cooked through (165°F).

I used a brioche bun for this sandwich, some romaine lettuce, and some mayonnaise. I highly recommend using mayo or some other type of spread on the bun to ensure the chicken sandwich has moisture. The spread helps to complement the chicken and bun. It just balances everything out. You can use any type of spread that you want. I just love it with mayo. A chipotle ranch spread would heighten the sandwich. Even a Chipotle mayonnaise would be delicious.

Over the past year, chicken sandwiches have been gaining quite a bit of news popularity. Fast food establishments have been mass-producing chicken sandwiches. I am sure you have seen them online. They have been all over social media platforms and news sites. A lot of the fast-food establishments’ chicken sandwiches are packed with preservatives that are not so good for our bodies Fortunately, this version is homemade so you know exactly what is going in it. It gives me peace of mind knowing that I am eating a healthier version. And, it fully satisfies any fast food sandwich cravings that I may have.

You can serve this with chips, french fries, or sweet potato fries. Having this chicken sandwich with sweet potato fries is my favorite way to eat it! I bake them instead of fry them to stay on the healthier side even more. If you want something healthier, a side of fruit is a good option.
