Ingredients

  • 1 stick of butter, softened

  • 1 cup granulated sugar

  • 3 ripe bananas, mashed

  • 2 large eggs, at room temperature

  • 1/2 cup whole milk

  • 2 teaspoons almond extract

  • 1 teaspoon vanilla extract

  • 1 cup sour cream

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • pinch of salt

  • 1 cup semi-sweet chocolate chips

  • Optional:
  • powdered sugar to decorate

  • Materials:
  • 10-inch bundt pan

  • Baking spray

  • Whisk or Hand Mixer

  • Spatula

Directions

  • Preheat oven to 350ºF (177ºC).
  • In a large bowl, using a whisk or a hand mixer, mix butter, sugar, bananas, eggs, milk, almond extract, vanilla extract and sour cream. Stir in flour, baking soda, baking powder, cinnamon and salt.
  • Fold in chocolate chips.
  • Spread batter into a well greased 10-inch bundt pan.
  • Bake 55 to 60 minutes or until cooked all the way through (use a toothpick or knife to check that it comes out clean). Allow the cake to cool for 20 minutes in the pan before removing from the pan and garnishing with powdered sugar.

Notes

  • The riper the bananas, the sweeter and moister the bread.
  • To quickly ripen bananas, bake the unpeeled bananas at 350°F/177°C for 10 minutes. They will brown very quickly.

I like this recipe a lot because you can play around with how you make it. There’s no one way to make banana bundt cake. It is almost like eating banana bread, but is just so much better. I like to add chocolate chips and almond extract, but if you prefer walnuts add those! And if you don’t like chocolate chips, well, leave them out!

Just last week one of my neighbors told me she and her mom were baking banana bread! My wheels started turning, and I just knew I had to make something banana flavored of my own! I went with making my own version of banana bundt cake. I use a 10-inch bundt pan for this recipe. Make sure that you spray your bundt pan really well so that the cake can just pop right out after it’s cooled.

When selecting your bananas, make sure they are ripe. You can even put them on a baking sheet in the oven for 10 minutes at 350°F to brown them. I like choosing organic bananas, that’s just my preference. About three ripe bananas will do the trick. The riper the banana, the sweeter the flavor. You want to make sure that your other ingredients do not overpower that banana taste.

What I love about this recipe too, is that it doesn’t take long for the aroma to fill the kitchen and permeate throughout the entire house! Once this bundt cake is in the oven, within 30 minutes (maybe sooner) you’ll start to smell that banana permeating throughout your kitchen! It gives me this feeling that I’m doing something right. A delicious recipe, with a sweet smelling aroma makes for a happy home! 

The bundt cake should bake for about 50-60 minutes or until fully cooked. Before taking it out of the oven use a knife or a toothpick to check to make sure it’s ready! Once out of the oven, let it cool for about 15-20 minutes. Garnish with some powdered sugar then slice it up and enjoy! Oh, and if you want to get extra creative, make your own banana icing to frost on top! Or, just enjoy it plain. Either way, you can’t go wrong. Happy eating! Until next time!

  1. Is the flour amount correct in this recipe? I just made it following directions carefully and the batter was very thin. I baked it for 60 minutes, knife came out clean but it was kind of gooey and dense. The cake fell while cooling and was not crumbly once I cut into it like I would expect a cake to be.
