Flour-Free Banana Oat Cookies

These flour-free, sugar-free, guilt-free cookies are sweetened with bananas. You can have exceptional cookies for breakfast or at any moment of the day without any guilt! A huge bonus for me was that my family also loved these cookies. They had no idea they were so healthy. After months of trying to convince them to eat healthily, this was the single solitary recipe that convinced them. Now we can eat healthier and still enjoy the meal.

Flour-Free Banana Oat Cookies

Ingredients

  • 2 bananas, mashed

  • 1/4 cup milk

  • 1 egg, beaten

  • 1 teaspoon honey

  • 1/2 teaspoon vanilla extract

  • 1 cup oats

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder

  • 1/8 teaspoon salt

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix mashed bananas, milk, egg, honey, and vanilla extract together in a bowl. Stir in oats, cinnamon, baking powder, and salt.
  • Spoon batter into mounds on the baking sheet, spacing them a few inches apart.
  • Bake in the preheated oven until the top looks dry and edges are golden about 15 minutes.

  1. Very good soft cookie. I added dark chocolate chips as well, not even a 1/4 cup. It’s delicious and quilt free.

    • Maybe bananas were too big? Maybe used tablespoons rather than teaspoons? Maybe too much honey (because it tends to mound up on the spoon)? [I have no idea why this is only letting me use caps.]

      I GAVE it 3 STARS because I haven’t made IT yet (and clearly it is not explanatory ENOUGH, like what size of BANANAs, what ripeness of bananas), but it sounds good enough and simple enough I do intend to make it.

My friend and i made some improvements on the recipe: decrease milk to 1/8 cup, increase oatmeal to 1 1/2 cups, allow batter to rest in the Bowl, uncovered, for a half hour, then increase oven temp to 375. I also use apple pie spice iNstead of plain cinnamon. I make 16 cookies, My oven takes 20 minutes. We renamed them “breakfast cookies.” 3 of them with a cup of coffee iS a wonderful, healthy, low calorie, high fiber, and filling Breakfast.
