This Coconut Chia Pudding recipe is a keto-ready dessert that is just right for a cool, pudding-type treat topped with delicious fresh berries. The pudding will set up in three hours, but can be made ahead to chill overnight.

Ingredients

  • 1 Can of Coconut Milk

  • 1/4 Cup of Chia Seeds

  • 1/4 Cup of Berries

  • 1 tsp of Vanilla Extract

  • Stevia to taste

Directions

  • Combine all of the ingredients in a bowl except the berries. Stir well and then transfer the mixture to a sealed container.
  • Let the chia seed pudding sit in the refrigerator for 3 hours or overnight.
  • Once it is ready you can separate it into 4 servings and add a handful of berries on top.
