Ingredients

  • 2 bread slices, toasted

  • 5 oz. smoked salmon

  • 4 eggs

  • 2 tablespoons heavy cream

  • Salt, to taste

  • Black pepper, to taste

  • Extra virgin olive oil

  • 1 tablespoon chives, chopped

Directions

  • In a small bowl, beat the eggs and season with salt, pepper, and 2 teaspoons of extra virgin olive oil.
  • Add heavy cream and mix with a fork to combine.
  • Heat 1 tablespoon of extra virgin olive oil in a medium-size skillet and pour in the eggs.
  • Cook and move the eggs across the skillet with a wooden spoon until the eggs are cooked through.
  • Top bread slices with scrambled eggs, smoked salmon, and season with salt and pepper.
  • Sprinkle with chopped chives and serve.

Notes

  • Add some avocado slices for more flavor.
