Ingredients

  • 2 cups All-purpose flour

  • 3/4 cup Butter, softened

  • 1 cup + 2 tablespoons Sugar, white granulated

  • 1 Egg, large

  • 1/4 cup Molasses

  • 2 teaspoons Ginger, ground

  • 1 1/2 teaspoon Baking soda

  • 3/4 teaspoon Cinnamon, ground

  • 1/2 teaspoon Cloves, ground

  • 1/4 teaspoon Salt

  • 1 pinch Black pepper

Directions

  • Preheat oven to 350° F (175° C).
  • In a medium-sized bowl and combine flour, ginger, cloves, baking soda, salt, cinnamon, and black pepper together and set aside.
  • In large bowl, beat together 1 cup sugar and butter for 4-6 minutes until soft and light.
  • Add egg to butter and sugar mixture and beat for 30-40 seconds.
  • Add molasses, mix well.
  • Now sift dry ingredients into the wet mixture stirring gradually. Mix until well incorporated into a dough. Be careful not to over-mix. Refrigerate dough for one hour, or until solid enough to roll.
  • Make small size balls and roll them in remaining 2 tablespoons sugar. Place them on an ungreased cookie sheet at a considerable distance as they spread, and then flatten them with your fingers or a flat spatula.
  • Bake in batches in preheated oven for 10-12 minutes, until done. Transfer to a cooling rack. Serve when cool.

Notes

  • Don’t over mix the ingredients once dry ingredients are added.
  • Use dark molasses when you make ginger cookies because it gives a beautiful color to the cookies giving them an enticing look. 
  • Keep the remaining dough balls in an airtight freezer bag, be sure to squeeze out excess air.
  • If you want to make your ginger cookies crispy, don’t add baking soda.

  1. The 2ND paragraph under serving with chocolate ice cream lists nutmeg as one of the aromas of the baking COOKIES but I don’t see nutmeg listed as an INGREDIENT. Am I missing something?

  2. I’m going to use black strap molasses, because we love it, and try them with almond and a touch of coconut flour and monk fruit to make them keto!

  3. I think addng chopped crystalized ginger and some grated fresh ginger will make these cookies spicier and differentiate them from plain molasses cookies.
