I recently tried a recipe for Garlic Butter Salmon & Mashed Cauliflower, and it was a keto-friendly meal that exceeded my expectations. Not only was the salmon incredibly flavorful, but the mashed cauliflower was a delightful and low-carb alternative to traditional mashed potatoes.

To make this recipe, I started by preparing the garlic butter mixture. I combined melted butter with minced garlic and a selection of savory seasonings, creating a fragrant and flavorful mixture.

Next, I seasoned the salmon fillets with salt and pepper before generously coating them with the garlic butter mixture. The salmon was then baked in the oven until it reached the perfect level of tenderness and flakiness. The aroma that filled the kitchen was absolutely mouthwatering.

While the salmon was baking, I prepared the mashed cauliflower. I steamed cauliflower florets until they were tender, then transferred them to a food processor. To create a creamy and luscious texture, I added a touch of butter and a splash of cream. I processed the mixture until it reached a smooth and velvety consistency, just like traditional mashed potatoes.

Once the salmon was done, I served it alongside a generous scoop of the mashed cauliflower. The combination of flavors was exceptional. The garlic butter coating gave the salmon a rich and savory taste, while the mashed cauliflower provided a creamy and satisfying accompaniment.

What I loved most about this recipe is that it offered a delicious and nutritious meal while being keto-friendly. Salmon is a fantastic source of protein and healthy fats, making it a great choice for a well-rounded and satisfying dish. The mashed cauliflower was a perfect low-carb substitute for mashed potatoes, providing all the creaminess without the added carbs.
