  • Pinch of Pepper

Directions

  • Preheat the oven to 350F/175C.
  • Start by chopping the green pepper into very small cubes.
  • Combine the meat, egg, green pepper and spices into a bowl and mix well. Divide the meat mixture into a greased muffin tin. Bake in the oven for 18 minutes.

The cauliflower mash was a delicious and satisfying alternative to traditional mashed potatoes, and it paired perfectly with the flavorful mini meatloaf.

To make this recipe, I started by steaming cauliflower until it was tender. Then, I transferred it to a blender and added a generous amount of rich butter. I blended the cauliflower until it reached a smooth and creamy consistency, just like mashed potatoes.

While the cauliflower mash was cooking, I prepared the mini meatloaf mixture. I combined ground meat with a variety of seasonings and formed individual portions in a muffin tin. The mini meatloaves cooked quickly in the oven, and the aroma that filled the kitchen was absolutely mouthwatering.

Once the mini meatloaves were done, I plated them alongside a generous dollop of the cauliflower mash. The combination of flavors and textures was outstanding. The mini meatloaf was juicy and flavorful, and the cauliflower mash was creamy and velvety.

What I loved most about this recipe is that it offered all the comforting flavors of traditional meatloaf and mashed potatoes, but in a healthier and keto-friendly way. The cauliflower mash was a fantastic alternative, providing all the creaminess and satisfaction without the excess carbs.
