Ingredients

  • 1 cup of quinoa

  • 2 large sweet apples, peeled, cored and grated

  • 1 lemon, zest and juice

  • Raisins, to taste

  • Dried cranberries, to taste

  • Water

  • 1 teaspoon cinnamon

Directions

  • Pour lemon juice over grated apples.
  • Put raisins and dried cranberries in a small bowl and pour the water over to cover.
  • Cook the quinoa according to the instructions on the package.
  • Drain raisins.
  • When quinoa is ready, add in grated apples, cinnamon, lemon zest, and raisins. Stir and cook for a minute or two.

Notes

  • You can cover raisins and cranberries with rum and cover the bowl with a plastic foil. Let it stand for 2 hours.
  • Add some orange zest for more flavor.
