  • 6 eggs

  • 2 tablespoons cooking cream

  • 8 cherry tomatoes, cut in half

  • 1 tablespoon olives, pitted and cut into rounds

  • 2 tablespoons Parmesan cheese, grated

  • 8 basil leaves

  • 1 tablespoon parsley

  • Extra virgin olive oil

  • Salt and pepper, to taste


  • Add cherry tomatoes, olives, Parmesan cheese, parsley, and basil in a mixing bowl. Season with salt and pepper, and drizzle with extra virgin olive oil.
  • Whisk eggs in a small bowl and add in cooking cream. Mix to combine.
  • Heat 1 tablespoon of extra virgin olive oil in a non-stick skillet over medium-low heat. Pour in half of the whisked eggs and cook for approx. 2 minutes.
  • Top with half of the cherry tomatoes and olives mixture.
  • Cover and cook for an additional 2 minutes, until the eggs are cooked through.
  • Fold the omelette over and slide it onto a serving plate.
  • Repeat the procedure for the second omelette.


  • You can replace chopped parsley with cilantro or chives.
  • Drizzle the omelette with balsamic vinegar glaze.
