Pin Print Mediterranean Omelette 4 from 6 votes Servings2 servingsPrep time10minutesCooking time7minutes Ingredients 6 eggs2 tablespoons cooking cream 8 cherry tomatoes, cut in half1 tablespoon olives, pitted and cut into rounds2 tablespoons Parmesan cheese, grated 8 basil leaves1 tablespoon parsley Extra virgin olive oil Salt and pepper, to taste Directions Add cherry tomatoes, olives, Parmesan cheese, parsley, and basil in a mixing bowl. Season with salt and pepper, and drizzle with extra virgin olive oil.Whisk eggs in a small bowl and add in cooking cream. Mix to combine.Heat 1 tablespoon of extra virgin olive oil in a non-stick skillet over medium-low heat. Pour in half of the whisked eggs and cook for approx. 2 minutes.Top with half of the cherry tomatoes and olives mixture.Cover and cook for an additional 2 minutes, until the eggs are cooked through.Fold the omelette over and slide it onto a serving plate.Repeat the procedure for the second omelette.
